20th Dubai International Food Safety Conference
Talk Session: Technology Tools to Enhance Verification
Title: The Next Generation Technology for Monitoring Hygiene & Sanitation
Speaker: Minori Ohshima (Kikkoman Biochemifa Company, Overseas Hygiene Testing Group)

Overview:
Beyond ATP: Expanding Hygiene Monitoring with the Kikkoman A3 Method
Rapid hygiene monitoring plays an important role in modern food safety management. Among various approaches, ATP bioluminescence testing is widely utilized to assess cleanliness and verify sanitation effectiveness.
This session examines the scientific background of the Kikkoman A3 Method, an innovative hygiene monitoring technology that measures ATP, ADP, and AMP simultaneously. By expanding detection beyond ATP alone, the A3 method provides additional information on biological residues that may be present after cleaning processes.
Through scientific principles, application examples, and practical considerations, the presentation will discuss how comprehensive adenylate measurement can support cleaning verification, environmental monitoring, and evidence-based hygiene management in food and beverage manufacturing facilities.
Date and Venue:
17th November at Dubai World Trade Center
